Guilt Free Lemon Blueberry Loaf

Yay, another recipe for you to enjoy! This recipe is made from scratch, but I took some time to tweak a few ingredients and swap them out for healthier ones. I love baking and enjoying my goodies, however I tend not to bake as often because it’s hard finding good recipes that are a bit healthier. For most recipes we deal with really unhealthy ingredients, that spikes our sugar and fat intake very quickly. Which for me is a huge turn off when it comes to baking. As much as I love homemade treats, the amount of sugar in things these days is insane.

I have been baking more lately during COVID and found time to swap things in and out that help the baked goods become a tad bit healthier so they fit into my daily macro intake goal. I love sweets, but I can’t pour 1-2 cups of sugar into my food. Going out for a treat is a different story because you eat it and it’s gone, but having snacks around the house that have that amount of sugar is just a bad temptation and it’s why I don’t bake often. I’ll feel like I need to eat it because I made it and I shouldn’t let it go to waste. BUT, when you have something that has clean ingredients you know you aren’t harming your body with all the extra crap and sugar. I don’t have sweets every day, but sometimes it’s nice to treat yo self with a yummy snack!

My whole goal with this recipe is to keep it simple, delicious, and to help save you some extra calories, while swapping out oils and using plain greek yogurt instead. I also swapped out 1 cup of white sugar for only 1/2 cup of natural honey. I want this recipe to show you that you CAN make healthier swaps and live your life with balance! 🙂

Macro Friendly Fudge Brownie Recipe

Ingredients:
  • 2 cups all purpose flour
  • 1 cup rolled oats
  • 1/2 cup honey
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • zest 1 1/2 lemons
  • 1 cup fresh blueberries
  • 3/4 cup milk ( I used 2%)
  • 2 eggs
  • 1/2 cup plain greek yogurt
Directions:
  1. Preheat your oven to 350 degrees. Prepare a standard loaf pan by greasing it with oil or adding parchment paper.
  2. Stir together dry ingredients. Flour, oats, baking powder, baking soda, salt and lemon zest.
  3. Add blueberries and toss around to coat.
  4. Add in the wet ingredients. Measure out, milk, greek yogurt, eggs and honey.
  5. Mix well and fold together. Pour into pan and place in oven for 50-55 mins or until your fork or toothpick is clean after poking it.
  6. Let it cool and serve! You get a nice crunch with a soft inside when you let it sit long enough to cool completely.
Healthy Version:


Serving size – one slice (Macros are roughly estimated)

Calories – 208
Protein – 7g
Carbs – 40g
Fat – 2.4g
Sugar – 15g

Unhealthy Version:

Serving size – one slice

Calories – 321
Protein – 5.9g
Carbs – 46 g
Fat – 13.6g
Sugar – 22g

So what you will notice here is that by taking out any vegetable oils and sugar you’re instantly making a better dish! You’re saving yourself some calories, fat and sugar. This goes to show you that eating with balance is important, but it’s also important to make healthier changes when you can. This my friends, is how you can still eat what you want in moderation, but also make better food swaps when necessary.
