Not only am I a foodie, but I really do enjoy dinner more than any meal of the day. Ok, I do love breakfast as well, but there’s something relaxing about having dinner with your loved ones and eating something delicious without having to be rushed. Maybe a glass of some red wine too! 😉 It’s the end of another day, which means one step closer to your goals. Dinner is a time to unwind, reflect on goals, talk about your day, and enjoy the time you have with your favorite people.
A menu for dinner can be challenging to plan, but I swear if you plan your dinners a week in advance, you’ll be less stressed and it will also keep your grocery budget in control. Jamie and I are synced with our calendars on our phone, so we plug in a menu and buy what we need for the week. It makes things so much easier!
Figuring out what meals to make can also be tough and a lot of people think that “healthy” food is costly and I swear it’s not expensive at all, unless you’re shopping at Whole Foods on a regular basis. Please read “Eat Healthy On A Budget”. I showed you all the tips and tricks and explained portions per dollar amount on how certain things like beef can go a long way.
Eating healthy is a huge part of my life, but for dinners I tend to find meals that are in between being really healthy and treat meals! Breakfast and lunches are always clean, so I have a little bit more fun with my night time meals.
Here are some dinner ideas to help you figure out your weekly meals. They won’t be recipes, just ideas to give you a boost of motivation. Follow along or just experiment yourself. These are all pretty easy! My goal here is to show you all the different ways you can cook your protein and carbs to make it fun and enjoyable.
People say eating healthy is boring. Pft! Have a look for yourself. 🙂
Flank steak, roasted potatoes and veggies
Flank steak is glorious! It’s also one of the leanest steaks out there, which means you don’t need to cut around the fat like other steaks. This steak is so tender it pulls apart without you even cutting it with a knife. It’s juicy, tender, it holds in marinade flavour very well, and it’s inexpensive, what more would you want? For carbs you can do anything, but I love roasted white or sweet potatoes and some sort of greens or roasted cherry tomatoes. Roasted anything is just delicious.
Jamie found this steak marinade and it’s very flavourful:
1/4 cup oil
1/3 cup Soy sauce
1/4 cup Red Wine Vinegar
2 Tablespoon Lemon juice
1/2 cup Worcestershire sauce
1 Tablespoon Dijon mustard
Salt and pepper to taste.
BBQ Chicken Salad
Chicken salad is more of a lunch thing for me, however if you’re a person who loves a yummy summer salad this one is perfect. Always try to add some sort of protein to your salad to get the full benefits of healthy eating! Your body needs protein, so slice it up! Adding cucumbers, tomatoes, lettuce, peppers, onions, topped with small chunks of apples makes a perfect summer salad. As for the dressing, I’m addicted to simple ones that still make the salad pop with flavour. I always make my own, which is just some olive oil, white balsamic vinegar, lime juice, salt, and pepper! As easy as it is, it’s amazing and very refreshing!
Taco Bowls With Rice
I love a good taco, but another thing I do love are taco bowls! Instead of having all the calories coming from the tortilla make a healthier version. Sauté some onions, peppers, tomatoes and whatever tickles your fancy. Add the ground beef on top of rice with some avocado slices, the sauteed veggies, maybe some cilantro and green onions, add some hot sauce or some light sour cream. I’m telling you, it’s what I live on a lot these days, it’s so easy to make and it’s packed with flavour.
Thai Coconut Turkey Balls With Coconut Rice
When Jamie and I did a meal prep service we got this dish and I saved the recipe card until I got the hang of making it from scratch. This meal pops with flavour and you can make it as spicy as you’d like. They have recipes all over the web, so it’s easy to find. This dish is healthy and you can add or take out things and make it your own.
Slow Cooker Shredded Mango Chicken With Coconut Rice
Same, same, but different. This one is similar to the one above, but it’s about changing up the flavour. Cook the chicken in a sweeter salsa like a mango flavour. Add chicken on top of coconut rice, and top it with all the goodies! Mango slices, cilantro, green onions, and of course, sriracha. It’s a really good dish that has sweet but spicy flavour. Don’t forget to add some jalapeños for that amazing crunch.
Slow Cooker Salsa Chicken With Rice + Veg
Who doesn’t love the slow cooker? It makes your house smell good, it’s not a lot of effort and the dishes always turn out superb! Jamie and I always wing it and just throw in a jar of salsa with a couple chicken breasts and add in some spices. Have fun with these meals and add in whatever flavours you would like! The chicken just pulls apart and it’s easy to get down. Coming from a bikini competitor I am now picky with my chicken, since I ate boring chicken a lot during prep, I need flavour now! I prefer red meat, but it’s all about learning how to season your proteins to get that delicious flavour.
You can have this dish however you want, add the shredded chicken on top of a bed of rice or have some potatoes, the chicken will be juicer, so it does taste good with rice.
Classic stuffed peppers are great and make some extra for a delicious leftover lunch!
BBQ Chicken and Veggie Kabobs
Simple, tasty and smells like summer. Add some cut up chunks of chicken breasts on a skewer with some pepper, onion chunks along with any other ones you would enjoy. I love adding some mushrooms on it too!
Have these with a side of rice, potatoes, or roasted potatoes. Corn on the cob with this dish is also perfect.
Chicken Tikka Masala
I’m a sucker for flavour! I love Indian foods and everything about it. Jamie and I ordered from this amazing Indian place and had this dish with a side of rice and garlic naan bread. Ahhhh, SO GOOD. So Jamie decided to make this own Tikka Masala dish, which turned out amazing.
Grilled Fish Tacos with Mango Salsa
This one is very summery and has flavour for days. The salsa we make has fine pieces of onions, jalapeños, mango and avocado. You can also make your own mayo dressing with some lime juice. Easy on the mayo though. 😉
Salmon, Rice or Risotto and Veggie
This is a dish I enjoy, but don’t eat it often because the calories are too low hah. Squeeze some lemon juice on top of the salmon and some lemon slices on it as well. Simply bake for about 20 mins or so, side of rice or some risotto and a veggie of your choice.
Rotisserie Chicken Taquitos (Flautas)
Rotisserie chicken at your local grocery store is cheap and already made. This is easy for meal prep or a simple dish for dinner when you don’t feel like cooking. This is the time to be creative!
Shred the chicken and put it into a bowl with some cumin, cayenne, lime juice and mix with some olive oil so everything can stick together, put it into Mexican tortillas, bake it and enjoy! Make sure they get crispy. On the side add some sour cream or a dipping hot sauce. My parents are from Mexico, so I grew up on all the homemade Mexican dishes. This is a fun creative take on my mom’s dish. I can honestly never get sick of Mexican flavours.
Margaritas anyone? 😉
TIP: Buy 2 or 3 rotisserie chickens and use them for lunches throughout the week. Meal prepping can get complicated, but these are cheap, you can make the dishes differently, and saves you some time.
Chicken, Roasted Potatoes and Veggies
Your choice of flavour for your chicken breast. Roast some white potatoes, sweet potatoes, carrots, brussel sprouts, parsnips and onions with some olive oil, seasoning and some rosemary and any other herb you’d like. Nothing tastes better than roasted vegetables and carbs. Make extra so you have carbs for your lunch!
Chicken or Scallop Stir Fry
With soy sauce, sesame oil, rice vinegar and ginger this dish won’t ever disappoint! Rice always tastes great with this meal.
Meatloaf, Mashed Potatoes and Green Beans
Classic meatloaf dish with ground beef, but yet still so delicious. Add some milk and a tad amount of butter in the mash potatoes to make it creamy and rich.
